Best Tomato Peach Bruschetta Recipe
I remember the first time I had bruschetta. Fifth grade. We made a class cookbook which featured our favorite recipes. And of course you had to bring a sample of your recipe to share with the class. A kid in our class was Italian and their mom made bruschetta. It was AMAZING. Needless to say I’ve loved bruschetta since then.
I like to add a twist to the classic bruschetta recipe: peaches. It adds a subtle sweetness to the salt and olive oil. I made this bruschetta for a gathering with friends and they loved it. I’m sure you will too! This recipe is perfect for Summer and Fall when both tomatoes and peaches are in season. Plus you can dress it up with additional toppings that you like!

Best Tomato Peach Bruschetta Recipe
Ingredients
- 3 large tomatoes whichever types you want
- 1 large peach
- fresh basil
- salt & pepper
- minced garlic
- butter
- olive oil
- 1 baguette sliced diagonally
- parmesan cheese
- balsamic vinegar
Instructions
- make a quick garlic butter by adding minced garlic to butter in a bowl and heat for 20 seconds
- brush garlic butter on your sliced baguette
- toast baguette slices in the oven at 400Β°F for 12 min. now you have crostini!
- chop tomatoes, peach, basil then add to a bowl
- add olive oil, salt, pepper, garlic, and mix
- let your bruschetta mixture sit in the fridge for at least an hour
- top your garlic crostini with your mixture
- sprinkle parmesan and balsamic vinegar on top
